This is my favorite Chicken Tortilla Soup recipe that I have tried! I always add a can of black beans, and sometimes 1 can of corn. I like to slice a few carb balance tortillas into thin strips, and toast them in the oven for toppers! I use a can of Rotel, and leave out a lot of the peppers so that it isn't too warm for the kids.
